  • For the Kabsa spice mix, use Tawabel Al-Arab Kabsa Spice Blend. Mix well and set aside until needed.
  • “Heat oil in a large heavy-bottomed pan over medium-high heat. Add the onions, ginger, garlic, and green chilies, and sauté for 2–3 minutes, or until the onions turn golden brown. Add the bay leaves, cloves, cardamom pods, and cinnamon stick, then fry for 1 minute until fragrant.”
  • “Stir in the tomato purée and add Tawabel Al-Arab Kabsa Spice Blend. Season with salt and fry the spice blend for 1 minute to release its rich aroma and flavor. Add the carrots and diced tomatoes, stir well, and cook for a further 2 minutes.”
